A January Sunday on Ambergris Caye

After a few grey WINDY days, the clouds parted…the winds slowed and TAH DAH!  The perfect Sunday.  Temperature about 78 degrees.  (And it’s looking like a beautiful week.  Perfect since I’m heading to Caye Caulker for two nights.)

No more hanging around the house – it’s time to GET OUT!

First thing Sunday morning is Sunday morning Yin Yoga at Ak’Bol Resort at 10am.  It is the most low-key slow stretching, low-to-no exertion yoga…I always feel so much better afterward.  The gorgeous surroundings absolutely help.

Yoga out on the dock – or you can just eat a Feta Spinach Omelet or Coconut French toast at the restaurant.

I headed to town to run some errands…but stopped at Truck Stop on the way home.

A beautiful tortie cat hanging out on a porch in San Pedro.  (I found 10 semi-interesting facts about Tortoiseshell Cats.)  I LOVE THEM.

My friend Mike had his favorite drink – The Maya Fire (habanero infused rum & lime juice) – and I got some tacos to go.

Citrusy Octopus and Pork Belly with Green Apple.

Crazy, right?  But they were tangy and sweet and sour and delicious.

Truck Stop is selling my books – $30BZD each – and now they are all signed by the author.  (That’s me.)

If you are not in Belize, you can buy them on Amazon.  I’ve sold almost 1100 so far online.

I hardly believe it myself.

And then I headed home to spend some time at the beach with the dogs.

Enjoy the holiday in the US.
